Beef Lentil Soup

A quick and hearty soup which can be prepared in a flash!
Ingredients:
1 lb ground beef
1 medium onion, chopped
1 garlic clove, finely chopped
1 cup mushroom, chopped
28 ounces tomatoes
1 stalk celery, sliced
1 large carrot, sliced
1 cup dry green lentils
3 cups beef stock
1/4 cup red wine
1 bay leaf
1 tablespoon parsley
1 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Cook and stir ground beef, onion and garlic in a large pot until beef is browned. Drain.
2. Stir in remaining ingredients. Heat to boiling, then reduce heat.
3. Cover and simmer, stirring occasionally, until lentils are tender - about 40 minutes.
