This is our top family favorite. Everyone always asks for the recipe, just be prepared to be embarrassed, because it's so simple! Everyone always thinks there is so much more to it. My mom got this in the early '70's from a neighbor when I was 11 yrs. old and came home raving about how great dinner smelled next door. . So don't let the simplicity of this recipe fool you, it is fantastic! This can be made obviously with fresh onion, but the dried onion does add a distinct flavor to the dish.
Ingredients:
2 lbs ground beef
2 -3 tablespoons dried onion
2 (10 ounce) cans campbell's beef broth
1 cup long grain rice
1 (4 ounce) can pieces and stems mushrooms
1 tablespoon worcestershire sauce
2 teaspoons curry powder
water
sour cream
Directions:
1. Brown meat with onions, drain fat.
2. Stir in remaining ingredients plus about 2/3 soup can of water.
3. I use a 12 oven safe stove top pan.
4. Bake 50 minutes covered at 350. Remove lid and check water. If a little water remains just continue cooking for 10 more minutes uncovered. If all liquid is absorbed add about 1/2 c water and continue cooking uncovered 10 minutes.
5. Top individual servings with a dollop of sour cream.
6. I serve with Garlic Bread and whole kernel corn.
