Beef Bourguinon - Crockpot

This is a simplified version of Beef Bourguinon for the crock pot. It is a very full flavored beefy meal. I serve it with egg noodles and sour cream on the side.
Ingredients:
4 pounds lean beef -- cubed
1 cup red wine
1/3 cup olive or vegetable oil (we use olive oil)
1 teaspoon thyme
1 teaspoon black pepper
8 slices bacon -- diced
2 cloves garlic -- crushed (i use about 6 cloves of garlic)
1 onion -- diced
1 pound mushrooms -- sliced
1/3 cup flour
Directions:
1. Marinate beef in wine, oil, thyme and pepper for 4 hours at room temp. or overnight in the fridge.
2. In large pan, cook bacon until soft. Add garlic and onion, saute until soft. Add mushrooms and cook until slightly wilted. Drain beef, reserving liquid. Place beef in slow cooker. Sprinkle flour over the
3. beef, stirring until well coated. Add mushroom mixture on top.
4. Pour reserved marinade over all.
5. Cook on LOW 8-9 hrs.
6. Serve with egg noodles and sour cream on the side.
7. Garlic bread goes well for sopping up sauce.
