Beef Bites With Red Bell Peppers And Cilantro Sauc...

I have not tried this dish, although I've had the recipe for ages! I simply forget to try it...but when I read through the recipe, it's just got to be good! I would prefer to grill the meat and peppers on the barby, but either way, it looks like a winner! Read more ! Make about 48 cubes.
Ingredients:
sauce
2 cups packed, stemmed fresh cilantro(2 to 3 large bunches)
1/2 cup olive oil
3 tbsps. fresh lime juice
1 tbsp. chopped jalapeno chile
1 1/2 tsp. dried oregano
1 large garlic clove, chopped
1/4 cup coarsely chopped red onion
salt and pepper to taste
beef and bell peppers
4 lbs. beef tenderloin cut into 1-inch cubes (about 48 cubes)
2 large red bell peppers, halved, seeded, cut into 1-inch squares
olive oil
Directions:
1. Sauce:
2. Puree first 6 ingredients in processor until almost smooth.
3. Add onion and process until finely chopped but not ground.
4. Season cilantro sauce generously with salt and pepper.
5. (Can be prepared 1 day ahead. Transfer to small bowl, cover and refrigerate.)
6. Beef and Peppers:
7. Preheat broiler. Place beef and red bell peppers in separate bowls.
8. Mix enough oil into beef and into bell peppers to coat.
9. Spread beef out on large baking sheet; sprinkle with salt and pepper.
10. Spread peppers out on another large baking sheet; sprinkle with salt and pepper.
11. Broil beef to desired doneness, about 3 minutes per side for medium-rare.
12. Broil peppers until just tender and beginning to brown, about 3 minutes.
13. Skewer 1 beef cube and 1 pepper square with toothpick.
14. Repeat with remaining beef and pepper.
15. Arrange on platter and serve with cilantro sauce.
16. This might be easier if done on the barby...skewer first then grill. I would probably parboil the peppers, then pat dry and put on skewer.
17. Lots of cracked black pepper would go on the meat!
