Beef Bites With Red Bell Peppers And Cilantro Sauc...

Ingredients:

Directions:

  1. Sauce:
  2. Puree first 6 ingredients in processor until almost smooth.
  3. Add onion and process until finely chopped but not ground.
  4. Season cilantro sauce generously with salt and pepper.
  5. (Can be prepared 1 day ahead. Transfer to small bowl, cover and refrigerate.)
  6. Beef and Peppers:
  7. Preheat broiler. Place beef and red bell peppers in separate bowls.
  8. Mix enough oil into beef and into bell peppers to coat.
  9. Spread beef out on large baking sheet; sprinkle with salt and pepper.
  10. Spread peppers out on another large baking sheet; sprinkle with salt and pepper.
  11. Broil beef to desired doneness, about 3 minutes per side for medium-rare.
  12. Broil peppers until just tender and beginning to brown, about 3 minutes.
  13. Skewer 1 beef cube and 1 pepper square with toothpick.
  14. Repeat with remaining beef and pepper.
  15. Arrange on platter and serve with cilantro sauce.
  16. This might be easier if done on the barby...skewer first then grill. I would probably parboil the peppers, then pat dry and put on skewer.
  17. Lots of cracked black pepper would go on the meat!
