Beef based soup with lean beef, navy beans, and other vegetables.
Ingredients:
6 cups beef broth, low sodium
3 cups water
1 lb lean ground beef
1 cup great northern beans
6 oz tomato paste
1 small onion, diced
2 cups zucchini, diced
2 cups carrots, diced
2 cups celery, diced
2 tbsp garlic, chopped
2 tbsp oregano
2 tbsp basil
2 tsp salt
1 tbsp pepper
Directions:
1. Brown beef in a pan.
2. In a large pot bring broth, water, spices and tomato paste to a boil. Add beans and allow to cook in broth as directed on bean package.
3. Dice onions and chop other vegetables into spoon sized chunks. Reduce heat on broth and bean mixture to a simmer. Add beef and vegetables until the vegetables are cooked to your liking.
