Beef and Brie Sandwich With Green Chili Mustard-Mayonnaise

Ingredients:
1 1/2 cups mayonnaise
1 cup dijon mustard
1/2 cup hot canned green chili
1/2 ounce garlic
48 slices pumpernickel bread or 48 slices dark rye
24 lettuce leaves
3 lbs roast beef, thinly sliced
2 1/4 lbs brie cheese, sliced
1 lb cornichon pickle, sliced lengthwise
2 1/4 lbs tomatoes, sliced
Directions:
1. Combine mustard, hot chiles and garlic in food processor or blender; process until smooth. Add mayonnaise to mustard mixture and stir until combined. Cover and refrigerate.
2. For each sandwich spread 2 bread slices with 1 tablespoon mayonnaise mixture each. Top with lettuce, beef, cheese, cornichons and tomatoes. Top with remaining bread slice.
