Ingredients:
2 tablespoon(s) finely chopped shallots
2 tablespoon(s) flour
2 cup(s) milk
2 tablespoon(s) olive oil

Directions:
1. Heat oil over medium heat. Add shallots cook 3 min. til soft. Stir in flour and cook stirring for 3 min. untilsmooth and bubbling. Paste should have the texture of wet sand.. Whisk in m ilk all at once and bring to a simmer. Whisking all the time until it begins to thicken. Turn heat to low ans simmer stirring with whisk and spatula scraping bottom for 10 minutes until sauce has thickened and lost flour taste. Season w/S&P. Strain while hot.
