Bright and beautiful Chevre (goat cheese) salad. Refreshingly healthy and surprisingly tasty. Can also use as a dip.
Ingredients:
chill time 10 -30 minutes
16 oz cooked black beans or
1 16 oz can drained and rinsed
4 cloves garlic
3 oz mung bean sprouts, cut
1 small avocado, cubed
8 scallions chopped (no chives)
2 oz walnuts, chopped
3 oz balsamic vinegar
1 oz grapseed oil
splash of white wine
8 oz goat cheese, cubed
1 herb flatbread, toasted on grill or in oven and cut into wedges
Directions:
1. Drain and rinse black beans.
2. Chop scallions (without chive) and roast iwith garlic cloves in oiled tin foil on grill or in oven.
3. Chop walnuts.
4. Mix vinegar and oil.
5. Toast flatbread.
6. Mix beans, cooled scallion,s walnuts, bean sprouts, walnuts, vinaigrette, and goat cheese.
7. Chill approximately 10 minutes.
8. Cut toasted flatbread into points.
9. Serve as a salad cold with toasted flatbread points.
10. May also be served as a dip with the points or chips.
