Ingredients:
marinate for several hours
for the dressing
1/3 cup extra virgin olive oil
3 tablespoons red wine vinegar
2 cloves garlic
1/2 cup fresh mint, minced
1 teaspoon fresh oregano, chopped, or 1/2 teaspoon dried oregano
salt and freshly ground pepper, to taste
for the beans
1 pound tender green beans
1 tablespoon olive oil
Directions:
1. In a 9- by 12-inch non-metal dish, whisk dressing ingredients together and set aside.
2. Trim beans, put into a large pot and cover with cold water. Add olive oil. Bring to a boil, and boil till al dente, about 10 minutes. Beans should still have some bite to them.
3. Drain. Immediately add to dressing, turning to coat them. Cover dish and let beans marinate for several hours at room temperature before serving.
