Beans, Peas and Brown Rice

Basic vegan dish with generous portions
Ingredients:
1 1/2 cup brown rice
4 cups water
4 cup spinach
3 green onions
1 large red pepper
1 cup carrots, chopped
1 tbsp olive oil
1 tsp marjoram
1 3/4 cups six bean blend
1 cup peas, frozen
Directions:
1. Chop and sauté vegetables; reserve spinach. Add rice and sauté until translucent, about 1 minute. Add water and the spinach as well as spices and one bay leaf (you can also use curry or tamari or both and vary the ingredients). Simmer 45 minutes or until water is almost absorbed; add beans and peas and simmer 5 more minutes.
