Ingredients:
1 cup chicken broth
1 tablespoon fresh lime juice
1 teaspoon sugar
1/4 teaspoon kosher salt
1/2 cup rice
1 tablespoon unsalted butter
1 (15 ounce) can black beans, drained, rinsed, warmed
1/4 cup fresh cilantro, chopped
Directions:
1. Bring broth, juice, sugar, and salt to a boil in a saucepan. Stir in rice, cover and reduce heat to low. Cook15 to 20 minutes, or until liquid is absorbed.
2. Stir in butte. Combine with black beans and cilantro.
