Bean Sprout Salad – Sukju Namul

Ingredients:
3 cups water
3 cups fresh bean sprouts
1/2 teaspoon soy sauce
2 teaspoons vinegar
1 teaspoon sesame oil
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
2 green onions, finely chopped
1 teaspoon toasted sesame seeds
Directions:
1. In a large saucepan, bring water to a boil over high heat. Add bean sprouts, reduce heat to medium, and cook for 2-3 minutes, or until crisp-tender.
2. Pour bean sprouts into a colander and rinse with cold water. Drain well and place in a large bowl.
3. In a small bowl, combine remaining ingredients and stir to dissolve sugar.
4. Pour dressing over bean sprouts and serve.
