Ingredients:
1 cup onion, sliced
1 cup sweet red pepper, chopped
2 stalks celery, chopped
2 garlic cloves, minced
1 teaspoon fresh ginger, minced
240 g kidney beans
260 g sweet corn
220 g butter beans or 220 g lima beans
1/4 cup cider vinegar
2 tablespoons olive oil
2 (1 ounce) packets stevia, i plan on using splenda packets instead
salt & pepper, to taste
Directions:
1. Combine all ingredients and serve.
