Beans and rice make complete protein. Can substitute any kind of bean for the lentils without altering calories.
Ingredients:
2 1/4 cups uncooked lentils
1 cup uncooked brown rice
1 cup seasoned bread crumbs
1 cup fresh parsley
4 eggs
1 tsp salt
1 tsp pepper
1 tbsp cumin
1 tbsp chili powder
1 tsp cayenne powder
1 tsp garlic powder
1 tsp onion powder
Directions:
1. Prepare the beans and rice as directed on their packages.
2. Mix the cooked rice and beans with the bread crumbs.
3. Mix the spices together in a small bowl and then sprinkle over the bean/rice mixture.
4. Beat the eggs slightly and add to bean/rice mixture, stirring until everything sticks together.
5. Drop mixture by 1/4 cupfuls onto lightly oiled skillet and fry both sides until browned, 2-3 mins per side.
