This is from Good Housekeeping February 2010 issue. It isn't a 'recipe', but I'm posting it so I can find it when I need it, and others might find the information helpful too. It's how much a one pound bag of dried beans will produce in volume when it's cooked.
Ingredients:
6 1/4 cups cooked black beans
7 1/2 cups cooked garbanzo beans (chickpeas)
6 1/4 cups cooked pink beans
5 cups cooked pinto beans
5 cups red kidney beans
6 1/4 cups cooked white kidney beans (cannellini)
Directions:
1. Dried beans will double or triple in volume depending on the variety. A one pound bag of dried beans will yield the amount above when cooked.
2. I took a stab at number of servings and prep time because it's required by the program, but it's just a guess, so please follow the directions on the bag.
