Easy and deliciously healthy bean burritos, can be eaten in a tortilla or with a side of rice.
Ingredients:
1 cup red kidney beans
1 tbsp olive oil
2 large tomatoes, chopped
1 large onion, diced
1 tsp cumin
1 tsp oregano
Directions:
1. Heat oil on medium heat, add onions and saute until slightly brown.
2. Add remaining ingredients and mix until boiling.
3. Reduce heat and cover for 10 minutes.
4. Serve in a tortilla topped with mashed avocado and shredded cheddar cheese.
