This is a definite FUN dish and a MUST for a Jimmy Buffet tailgate! Really good, too, frozen and processed in the blender for an adult slushie. Wasted away again in Margaritaville.....
Ingredients:
1/2 liter coconut rum, captain morgan's parrot bay is the best
1 pineapple, peeled, cored, and chunked
1 quart strawberries, hulled & halved
1/4 watermelon, seedless, cubed
4 peaches, peeled and sliced
2 bunches green grapes, seedless, removed from stems
1 pint blueberries
1 cantaloupe, balled
4 limes, juiced (or more if they're not good and juicy)
1/2 cup sugar (or you can use splenda)
Directions:
1. In your very largest plastic container (I use the top of a Tupperware cake-taker) mix all fruit together. Pour lime juice over fruit, sprinkle with sugar, and then pour rum over all. Mix gently.
2. NOTE: I make this the very first day at the beach and we add fruit as necessary. Not to mention adding more rum! Oh, and feel free to use the entire bottle of Parrot Bay - it only makes it better!
