This is a tasty and easy side dish. Plus clean up is easy too.
Ingredients:
4 large potatoes, cut into cubes
2 medium onions, peeled and sliced
2 medium bell peppers, cut into stips (or 1 inch cubes if desired)
1 cup barbecue sauce (hickory flavor)
2 -3 garlic cloves, minced
1/4 teaspoon tabasco sauce (or more if desired)
2 sheets aluminum foil (12 x 18 inch)
nonstick cooking spray
Directions:
1. Preheat grill to medium-high heat.
2. Lightly spray one side of the foil sheets with non-stick cooking spray.
3. Combine all other ingredients in a large bowl, stir to coat.
4. Transfer ingredients to the sprayed side of one sheet of foil, place the other sheet of foil, sprayed side down, on top of the veggies and create a packet by folding and crimping edges tightly to seal.
5. Place packet on the grill and cover with grill lid.
6. Cook about 20 minutes or until potatoes are tender, be sure to turn packet over about halfway through cooking .
