Batatya Chi Sukki Bhaji (Sauteed Potatoes and Bell Pepper)

Ingredients:
3 medium potatoes
1/2 red bell pepper, cubed
1/2 green bell pepper, cubed
3 tablespoons oil
1/2 teaspoon cumin seed
1/2 teaspoon turmeric powder
1/2 teaspoon paprika
salt
Directions:
1. Boil potatoes till cooked but firm.
2. Peel and cube them.
3. Sprinkle with salt, turmeric powder and paprika. Mix well.
4. Heat oil in a pan.
5. Toss in cumin seeds and stir-fry for a few seconds.
6. Saute the potatoes for a few minutes.
7. Lower flame and cook covered till lightly roasted and golden.
8. Stir in the red and green bell peppers.
9. Cook for a few minutes.
10. Serve hot with rotis or bread or puris or parathas.
