Basque Potatoes

These are very tasty and a nice addition to grilled steaks or burgers. Enjoy
Ingredients:
2 tablespoons olive oil
1 medium white onion chopped
2 cloves garlic crushed
1 bell pepper seeded and chopped
1/2 cup chopped parsley
1 cup chicken stock
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
6 medium potatoes thinly sliced
Directions:
1. Heat oil in a large skillet over moderate heat and sauté onion, garlic and bell pepper 5 minutes.
2. Add parsley and broth then season with salt and pepper.
3. Bring to a boil and remove from heat.
4. Layer sliced potatoes in broth in the skillet then bring to a boil over moderate heat.
5. Reduce heat and simmer covered for 20 minutes.
6. Pour a little of the cooking liquid over the potatoes when serving.
