I hope you'll enjoy this is much as I do. It's always a hit when I bring it to a summer party.
Ingredients:
2 pounds fresh green beans
1 large vidalia or other sweet onion, peeled and sliced thin
1 small handful of fresh basil, chiffonade
1/2 cup olive oil
salt and freshly ground black pepper to taste
1/4 cup of good vinegar -- i like a red wine vinegar or apple cider vinegar for this.
Directions:
1. Wash the beans and snip off the ends.
2. Steam the beans for about 5 minutes, until tender-crisp.
3. Immediately rinse the beans in cold water so they don't continue to cook.
4. Combine the beans, onions, basil, oil, salt and pepper in an attractive bowl.
5. Now you have to decide: add the vinegar now so that the salad has an interesting pickled flavor, or add the vinegar just before serving so that the green beans retain their bright color.
6. I usually choose to add the vinegar just before serving.
7. Serve at room temperature.
