Pronounced Basil Roo-ee, this wonderfully flavorful dish is the perfect summer appetizer. Basil and tomatoes are seasoned with jalapeno, garlic and sea salt. I received this recipe from a wonderful woman in our toddler playgroup. Serve with your favorite dippers such as baguette slices or pita chips.
Ingredients:
1 3/4 cups finely chopped fresh basil
2 small tomatoes, finely chopped
2 1/3 cups fine dry bread crumbs
3 cloves garlic, minced
1 jalapeno pepper, seeded and finely chopped
1 teaspoon sea salt
1/2 cup olive oil
Directions:
1. In a medium bowl, stir together the basil, tomatoes, bread crumbs, garlic, jalapeno, sea salt and olive oil. Cover, and refrigerate overnight. Serve with your favorite dippers!
