Basil Rice Soup

Thirty minute delicious chicken flavored soup. Servings vary according to portion size. For extra flavor, top with grated parmesan cheese before serving.
Ingredients:
2 tablespoons olive oil
2 cloves minced garlic
2 stalks celery, chopped
1 small onion, diced
1 carrot, peeled and chopped
1/4 cup chopped fresh basil
3/4 cup uncooked rice
2 medium tomatoes, seeded,peeled and chopped
4 cups chicken broth
1 cup water
salt and pepper
Directions:
1. Heat oil over medium heat and add garlic, celery, onion, carrot and basil.
2. Cover and cook for approximately 5 minutes, stirring occasionally.
3. Stir in rice and tomatoes and cook uncovered for 5 minutes, stirring occasionally.
4. Stir in remaining ingredients and heat to a boil.
5. Reduce heat and cover and simmer for 20 minutes or until rice is tender.
