Pinto or navy beans and a variety of veggies! Dump and SLOW COOKER IT!
Ingredients:
1 pound pinto beans
1 zucchini, diced
2 medium turnips, peeled and diced
1 large potato, peeled and diced
2 stalks celery, sliced
2 medium onions, chopped
28 oz can tomatoes, stewed
2 teaspoons basil
1/8 teaspoon crushed red pepper
1 tablespoon salt
2 tablespoons olive oil
Directions:
1. Cut, peel, dice, and toss into crock pot (after pre-soaking beans). High for 5-6 hrs or low for 7-8.
