Basic Vegetable Stock

A basic vegetable stock useable in many other dishes.
Ingredients:
8 cups water
1-1/2 cups vegetables; * diced 1/4-inch
1/2 cup onion; diced 1/4-inch
1/2 cup carrots; diced 1/4-inch
1/2 cup celery; diced 1/4-inch
1/2 teaspoon salt
1/4 teaspoon fine ground white pepper
1/4 teaspoon dried thyme leaves
Directions:
1. Bring the water to a boil.
2. Place the vegetables, onions, carrot and celery in the water and return to a boil. Reduce heat and simmer for 45 minutes.
3. Add the salt, white pepper and thyme and simmer for 15 minutes more.
4. Strain the stock and refrigerate until needed.
5. * Note: Vegetables can be any appropriate choice. Clean vegetable trimmings and ends may be saved frozen until a sufficient amount to make stock has been saved. Parts of vegetables that you may not want to serve might make an excellent stock.
