open faced tuna melt sandwiches. easy and light. perfect for lunch with a side of veggies or baked pita chips. if you like, you can cut calories with light Miracle whip and fat free cheese.
Ingredients:
165 g tuna, light, canned in water
1 tbsp. miracle whip
1 tbsp sweet pickle relish
4 slices whole wheat bread
4 slices tomato
4 tbsp grated parmesan cheese
1 tsp garlic powder
Directions:
1. Drain tuna. empty can into bowl. add miracle whip, pickle relish, and garlic powder. mix well.
2. toast bread lightly. divide tuna mixture among the bread slices. place 1 tomato slice on each sandwich. sprinkle with 1 tbsp. parmesan cheese. place under broiler just until cheese starts to turn color, or until edges of tomato shrivel somewhat.
3. enjoy!
