Basic Scrambled Tofu

From Isa Chandra Moskowitz's VEGAN BRUNCH.
Ingredients:
2 teaspoons ground cumin
1 teaspoon dried thyme, crushed
1/2 teaspoon ground turmeric
1 teaspoon salt
3 tablespoons water
3 garlic cloves, minced
2 tablespoons olive oil
16 ounces extra firm tofu, drained
1/4 cup nutritional yeast
Directions:
1. - Saute garlic in olive oil for 1 minute.
2. - Break apart tofu and saute for about 10 minutes, stirring often. The tofu should brown on at least one side. Add water if tofu gets too dry.
3. - Add spice blind and mix to incorporate.
4. - Add nutritional yeast and black pepper to taste. Cook for about 5 more minutes.
