Basic Roast Chicken

I think this moist chicken benefits considerably from basting the inside of the chicken as well as the outside. I do this with a bulb topped baster. This is a long time favorite here!
Ingredients:
1 whole frying chicken, rinsed and patted dry
salt and pepper
2 cups water
Directions:
1. Place chicken on rack in roasting pan.
2. Salt and pepper the inside and the outside of the chicken.
3. Add water to the pan.
4. Roast at 375*, uncovered, for 1 to 1-1/2 hours,until chicken tests done.
5. Baste inside and out every 15 minutes.
