Basic Potato Soup (Vegan)

Ingredients:
2 tbsp vegetable oil
1 cup onion, diced
1 tsp garlic, minced
3 lbs potatoes, peeled
1 1/2 tsp sea salt
1 cup soy milk
Directions:
1. Sautee onions and garlic in oil, until onions are translucent.
2. Add potatoes (peeled and cut into 1 cubes), salt and enough water to cover potatoes by 2-3 inches.
3. Bring soup to boil, reduce heat and cook until potatoes are soft. Drain veges (reserve liquid) and mash them.
4. Add soy milk and reserved liquid and continue mashing until desire consistency. Puree if you like. Add more of the reserved water and soy milk as needed.
5. Return the soup to the stove and warm. Top with scallions if desired.
