Delicious with apricot jam or any type of fruit topping or cheese. My mom gave me this recipe and its very easy.
Ingredients:
1 3/4 cups all-purpose flour
1/2 teaspoon coarse salt
2 cups whole milk, room temp
3 large eggs, room temp
5 tablespoons unsalted butter, melted
Directions:
1. Sift flour and salt into large bowl.
2. Whisk together eggs and milk then whisk into the flour.
3. Whisk in butter.
4. Strain the mixture into a medium bowl and refrigerate for 2 hours-1 day. Batter should be consistency of heavy cream.
5. Heat nonstick skillet on medium heat, coat with butter.
6. Ladle or Pour 3 tbs batter (small) or 1/3 cup (large) into pan.
7. Cook until top is set and the bottom is firm and golden.
8. Flip then cook until the other side is golden (45 seconds).
9. Serve ASAP.
