Ingredients:

2 cups fine semolina (wheat semolina is best)
1 tablespoon baking powder.
1/2 cup dry coconut
1/2 cup of butter/or margarine
4tbsp of canola oil
3 tablespoon orange blossom water or rose water or 1 teaspoon pure vanilla
1 cup 2% plain yogurt
1/4 cup white or brown sugar
for lite sugar syrup
1/2 cup white or brown sugar
1/2 cup of water
1 teaspoon lemon juice.
1 tablespoon orange blossom
1 small cinnamon stick(optional)
1tsp of margarine to grease the baking tray.
1/2 cup whole or chopped nuts for garnish(i used already grilled almonds and macadamia nuts)
Directions:
1. Method
2. In a large bowl,mix the semolina, baking powder, sugar.
3. Add butter, oil, yogurt and blossom water, mix well (with hands, no machine please!) until smooth and well incorporated.
4. Add dry coconut at the very end.
5. ps: the dough should be a little solid but very moist. if not moist enough, add a little bit of milk.
6. Grease the baking dish little bit of margarine
7. Pour your basbousa dough and spread it evenly .Garnish it with nuts insert them partially in to the mixture.
8. Set the tray aside for 30mn.
9. Poke the basbousa with a fork a little everywhere and pour syrup. let stand for 15mn, serve!
10. Bake
11. Preheat oven to 350F.place the dish in the middle rack of the oven and bake for 35-40 minutes
12. (after 20m through baking, decrease temperature to 250F for the remaining 15mn. so not to get the top too dark.
13. The result should be golden brown.
