Ingredients:
6 cup(s) vegetable broth
1/2 cup(s) pearled barley
2 carrots peeled and chopped
2 stalk(s) celery chopped
2 small potatoes chopped
1/2 medium onion, minced
2 clove(s) fresh garlic minced
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/3 cup(s) fresh parsley
Directions:
1. Heat the broth in a stock pot over medium heat. Add the barley, carrots, celery, potatoes, onion, garlic, salt, pepper and parsley. Bring all to a boil. Reduce the heat to a simmer and cook for 30 0 40 minutes, until the barley is soft.
