Barley Salad

Yummy. This is a great salad especially if you like barley, which I do. Enjoy
Ingredients:
1 can chicken broth
1-1/3 cup water
1 cup barley
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons salad oil
3 tablespoons red wine vinegar
1 large clove garlic peeled and flattened
1 cup diced green pepper
1/2 cup red onion diced
1/4 cup chopped fresh dill or 1 tablespoon dried dill weed
1/4 cup chopped fresh parsley or 1 tablespoon dried parsley flakes
1 stock of chopped celery
1 chopped red pepper
2 chopped radishes
Directions:
1. In a large pan bring broth and water to a boil then stir in barley and reduce heat.
2. Simmer covered on reduced heat for 45 minutes.
3. Combine salt, pepper, oil, vinegar and garlic together and let stand for 15 minutes.
4. When barley is cooked remove garlic from dressing.
5. Pour dressing over barley mixing well.
6. Add green pepper, onion, dill, parsley, celery, red pepper and radishes
7. Mix all ingredients together and serve hot or cold.
