These are from Ina Garten's Back to Basics book and were a big hit at a dinner party here. This is a recipe you can have on hand, just prepare the dough and freeze in a log, to have on hand for entertaining. These do not need anything else with them, a perfect appetizer to serve with drinks.
Ingredients:
1/4 pound sweet butter at room temperature
4 ounces freshly grated parmesan (one cup)
1 tsp. fresh thyme leaves
1/2 tsp. salt (i'll skip this next time, the cheese adds plenty of salt for my palate)
1/2 tsp. freshly ground pepper
1 1/4 cup all-purpose flour
a few srigs of fresh thyme as garmish for the serving plate
Directions:
1. Cream the butter for about a minute with the paddle attachment in your mixer.
2. On low speed add the Parmesan, thyme, salt, and pepper.
3. Next blend in the flour just until blended. If the dough is too dry add about 1 tsp. water.
4. Turn the dough onto a floured surface and press it into a ball. Roll the ball with your hands to form a nine-inch log.
5. Wrap this log in plastic and chill for at least 1/2 hour or refrigerate up to four days. (I froze the log a few weeks and then defrosted in my refrigerator a day before using.)
6. When ready to prepare preheat your oven to 400 degrees with the rack in the middle.
7. Line a baking sheet with parchment paper.
8. Slice the log into 3/8-inch thick rounds and place them on the parchment paper.
9. Bake 22 minutes, turning the baking sheet 1/2 way through the baking for even heat exposure.
10. Cool on a rack.
11. When cool arrange the crackers on a plate and garnish with a few sprigs of reserved fresh thyme.
