Ingredients:
1 tablespoon olive oil
1 onion (finely chopped)
400 g tomatoes (14oz canned chopped)
2 -3 garlic cloves (minced)
55 g dark brown sugar (2oz/1/3 cup)
3 tablespoons cider vinegar
1 tablespoon worcestershire sauce
1 tablespoon tomato paste (puree)
salt
pepper
Directions:
1. Heat the toil in a pan and add the onion and cook over a low heat for about 5 minutes, until softened but not browned.
2. Add the remaining ingredients, season to taste with salt and pepper and mix well.
3. Bring to the boil, then reduce the heat and simmer for 30 to 30 minutes, until thickened and then spoon into a serving bowl.
