Barbara's Stuffed Zucchini

Vegetarian stuffed zucchini. This is what to do with that huge zucchini you missed in the garden, that got too big!
Ingredients:
1 1/2 lb. zucchini, large
1/4 cup onion, diced
1 tsp. roasted garlic, minced
2 tbsp. red pepper, diced
2 tbsp. green pepper, diced
1/2 cup tomatoes, chopped
2 tbsp. black olives, sliced
1 tbsp. smart balance spread
1/4 cup bread crumbs, italian style
1/2 cup mozzarella cheese, reduced fat
2 tsp. extra virgin olive oil
1 tbsp. italian seasoning
Directions:
1. Cut top 1/3 length-wise of a large zucchini. Scoop out interior, leaving a boat-shape. Chop up zucchini flesh, set aside. In large skillet, put in olive oil. Saute onion, roasted garlic, red pepper and green pepper. In bowl containing chopped zucchini, add saute vegetables. Add chopped tomato and olives, stir, add Italian Seasoning. Put zucchini boat on baking sheet, fill boat with vegetable, seasoned mixture. Sprinkle zucchini with bread crumbs, dot with Smart Balance, bake in preheated 350 degree oven for approximately 25 minutes, pull out, cover top with Mozzarella Cheese and continue baking until cheese is melted. Cool for 10 minutes, serve.
