A nice tasting oat burger recipe that I got from a friend. Can also be baked with cream of mushroom soup for those who can eat it. But I enjoy it with the bar-B-Q sauce.
Ingredients:
1 cup cottage cheese
1 cup nuts, mixed
1 cup oatmeal
3 eggs
1 onion, chopped
1/4 teaspoon sage
1/4 cup gluten-free breadcrumbs
1/4 teaspoon salt
1/2 cup honey barbecue sauce
1/2 cup apricot preserves
Directions:
1. Put cottage cheese in strainer to drain excess liquid.
2. Chop mixed nuts, or put in food processor.
3. Add cottage cheese, nuts, oats, onion, seasoning and breadcrumbs (I use gluten free, but may use regular breadcrubs if able). Mix well.
4. Make small patties, using a tablespoons. (about the size of half dollars).
5. Spray Pam in saute pan and brown patties on both sides.
6. Heat oven 350°F.
7. Mix bar-B-Q sauce and apricot preserve.
8. Place burgers in glass baking dish and put some sauce on each burger.
9. Bake 350°F for 25-30 minutes.
