BANNANA LOVERS
Ingredients:
1/3 c vegetable oil
1 1/2 c mashed ripe bananas
1/2 tsp. vanilla
3 eggs
1 1/2 c pioneer biscuit mix
1 c sugar
1/2 c chopped nuts
Directions:
1. Preheat oven to 350 F. Grease bottom of loaf pan, 9x5x3 in.
2. Stir all ingredients in mixing bowl with a fork until moistened; beat vigorously 1 minute.
3. Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes.
4. Cool 5 minutes.
5. Run knife or metal spatula around sides of loaf to loosen; remove from pan; (if loaf sticks to pan, press gently on sides of loaf with knife or metal spatula.) makes 1 loaf.
