Bang Bang Chicken Kabobs

Found this online the other day and couldn't wait to make it so I did last night. It was so simple and not very time consuming at all. My son and husband asked me to make it again over the weekend so I'd say it was a huge hit.
Ingredients:
4 boneless skinless chicken breasts cut into 1 inch chunks
1 red bell pepper cut into 1 inch chunks (all i had was a green pepper)
1 medium yellow onion cut into 1 inch chunks
bamboo wood skewers soaked in water for 15 minutes
olive oil, salt, black pepper
1/4 cup mayo
1/4 cup thai sweet chili sauce
5-6+ drops of sriracha hot sauce – use this to taste- if you like things spicy, add more. if you don’t – add a few drops (i put in 8 drops and it was perfect for us)
Directions:
1. In a small bowl combine mayo with Thai Sweet Chili Sauce and Sriracha Hot Sauce
2. Whisk together until smooth and set aside
3. Season the chicken and veggies separately with salt and pepper to taste, then drizzle with olive oil
4. Skewer the chicken, then skewer peppers and onions
5. Pre-heat grill or grill pan to medium high heat then add the chicken and veggies to grill or grill pan
6. Rotate meat and veggies every couple of minutes so that everything cooks evenly
7. When veggies are tender, remove from heat
8. When chicken is almost completely cooked through (after about 10-12 minutes), use a brush to spread the sauce over the chicken
9. Rotate chicken and brush all sides with sauce
10. Remove from grill and allow to rest for a few minutes before serving
11. Next time I will double up sauce and leave some to put on table for dunking...It's that good!!!
