I am posting this recipe here so I will be able to find it again! This site has become my safe haven! This sounds too good to be true to me and I can't wait to try it.
Ingredients:
1/4 cup brown sugar, packed
3 tablespoons coffee-flavored liqueur or 3 tablespoons spiced rum or 3 tablespoons apple juice
3 tablespoons butter, cut up
3 bananas, bias-sliced 1/2-inch thick (firm-ripe)
1/2 teaspoon ground cinnamon
2 cups vanilla ice cream or 2 cups frozen yogurt or 2 cups poundcake
whipped topping (optional)
pecans (optional) or almonds, toasted (optional)
Directions:
1. Preheat oven to 400ยบ.
2. Sprinkle the bottom of a 1-qt. casserole dish with brown sugar.
3. Pour liqueur or apple juice over sugar.
4. Top with butter.
5. Add banana slices and sprinkle with cinnamon.
6. Bake, covered about 15 mins, or until juices around edges of casserole just begin to bubble.
7. Stir gently and spoon over ice cream/yogurt/pound cake.
8. Top with whipped topping and nuts if desired.
