I wanted to make a cake that used more natural ingredients without compromising on taste, I've added wheatgerm (best source of Vitamin E) & LSA mix which is common in Australia. You can use ground linseed (flax seed) if you don't have LSA. Make sure the bananas are very ripe! My husband loves this cake and it was a great way to get a treat that is secretly beneficial!
Ingredients:
3 bananas
1 1/4 cups sugar
2/3 cup butter
3 eggs
1/2 cup whole wheat flour
1/2 cup oat flour
1 cup spelt flour
1/4 cup wheat germ
1/4 cup ground flax seeds
1/4 cup desiccated coconut
1/2 teaspoon mixed spice
5 teaspoons buttermilk
1 cup walnuts (chopped)
1 teaspoon vanilla
3 teaspoons baking powder
Directions:
1. Heat oven to 170°C; butter or oil the pan.
2. Cream the butter and sugar, add all the wet ingredients slowly while beating.
3. Combine the dry ingredients with a wooden spoon into the wet mixture and pour into the pan (it will be very thick).
4. Cook for 40-60 minutes or until the skewer comes out dry.
