Ingredients:
1 1/2 cups cottage cheese
1/2 cup toasted coconut
1 1/2 cups chopped pineapple
1 cup halved strawberries
4 bananas
Directions:
1. Combine cottage cheese and coconut. Mix lightly. Chill.
2. Combine pineapple and strawberries. Mix lightly. Slice bananas in half lengthwise.
3. For each salad, arrange banana slices in lettuce-lined dish. Scoop cottage cheese mixture between banana slices. Sprinkle pineapple mixture on top.
