Banana-Sour Cream Bars

Light & fluffy, fine-textured, and very moist. Very simple. You can sprinkle this with powdered sugar, if you like.
Ingredients:
1/2 cup butter
1 1/2 cups sugar
2 large eggs
3/4 cup sour cream
2 large ripe bananas, mashed
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
Directions:
1. Cream butter and sugar.
2. Beat in eggs, one at a time.
3. Stir in sour cream.
4. Stir in mashed bananas and vanilla.
5. Combine flour, salt, and baking soda.
6. Stir into the wet mixture.
7. Pour into a greased 15 X 10 jelly-roll pan, and spread evenly.
8. Bake in a preheated 350°F oven for 15- 20 minutes or until done.
9. Cool.
10. Cut into squares.
