Adapted from Kentucky Banana Pudding on . 300 g of bananas was plenty. white sugar, cornstarch, egg, evaporated milk, milk, vanilla extract, Equal, bananas. Try 2 Tbsp sugar along with 12 packets Equal next time. cvt
Ingredients:
1 egg, beaten
4 tbsp white sugar
4 tbsp cornstarch
12 ounces evaporated milk
1 1/2 cups lowfat milk
2 teaspoons vanilla extract
12 g (packets) equal
299 g (about 3-4) bananas, slices, quartered
Directions:
1. Lightly beat the egg in a saucepan, then add the sugar, cornstarch, evaporated milk and regular milk. Mix together well.
2. Stirring constantly, cook over medium heat, then lower to low-medium as the mixture begins to thicken. Watch for the first bubble to break, then cook and stir for one more minute.
3. Remove from heat, add vanilla and mix well. Add sliced bananas and Equal. Refrigerate until chilled.
