Here's a muffin recipe for a single serving using protein powder that I love to eat to pump me and fill me up before or after a good workout! I calculate this muffin to be 240 calories and 138 grams. (1 scoop protein powder being at 110 calories)
Ingredients:
1 scoop vanilla whey protein powder
1/4 cup oats
1 teaspoon vanilla extract
1/2 teaspoon baking powder
2 tablespoons egg substitute
2 g stevia
1/2 teaspoon cinnamon
2 ounces bananas
Directions:
1. Smash banana.
2. Mix all ingredients together.
3. Pour into jumbo muffin tin.
4. Bake for 15 minutes at 350 degrees.
