Banana Pecan Streusel French Toast

Ingredients:

  • 4 ripe bananas, mashed (1 1/3 cup.)
  • 1-12 oz. can evap. milk
  • 1 tbsp. vanilla
  • 1 tsp. cinnamon
  • 1/4 tsp. almond extract
  • in a large bowl stir together bananas, milk, eggs, sugar, vanilla, cinnamon and almond extract. place bread cubes in a lightly greased 9 x 13 pan. pour egg mixture evenly over bread. top with streusel mix. cover and refrigerate overnight.
  • 1 tsp. cinnamon
  • 1/4 cup. brown sugar
  • 2 tbsp. flour
  • 1 tbsp. melted butter
  • 1/2 cup. chopped pecans
  • streusel--in a small bowl combine brown sugar, flour, butter, and cinnamon. stir in pecans.
  • bake at 350 degrees for about 40-45 minutes or until lightly browned. let stand 10 minutes before serving.

Directions:

  1. Amaretto Sauce
  2. 1/2 cup butter (1 stick)
  3. 1 cup powdered sugar
  4. 1/4 cup Amaretto
  5. 1 egg yolk
  6. Melt butter and sugar together in a small pan over low heat. Add amaretto and egg yolk, cooking and stirring for two more minutes. Top each serving with a small amount of sauce and sliced bananas.
