Fruity breakfast treat that's easy to make and fun to eat. Kids just love them.
Ingredients:
1-3/4 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 t vanilla extract
2 eggs, slightly beaten
1 1/2 c milk
1/2 c buttermilk
2 ripe bananas, mashed (about 3/4 cup)
3 tablespoons butter or margarine, melted
Directions:
1. In a medium mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
2. In another mixing bowl, combine eggs, milk, bananas, vanilla and melted butter.
3. Add to the flour mixture, fold until just combined. Batter will be slightly lumpy. Cook over medium heat on prepared griddle and serve immediately when done or keep warm in a loosely covered, ovenproof dish in a 300-degree oven.
