Banana Oat Coconut Prune Bread

My new favorite quick bread! Made some changes to my basic banana oat bread by adding some extra ingredients. This was the outcome and I love it. Super easy and quick to make.
Ingredients:
1 egg
3/4 cup applesauce
1/2 cup sugar
2 -3 mashed ripe bananas
1 tablespoon cinnamon
1 teaspoon cardamom
1 1/2 cups self-rising flour
1 cup oats
1/2 cup milk
6 -8 cut up prunes
1/2 cup coconut flakes
Directions:
1. Mix the first 6 ingredients. Add flour, oats, milk, prunes and coconut and stir until mixed well.
2. Pour batter in greased loaf pan, sprinkle with some oats and bake for about 35-45 minutes at 375 degrees.
