Gearing up for World Nutella Day (Feb 5th), I whipped up these little babies. Not too sweet and just chocolaty enough to make you smile. A nice thing to fix your sweetie for Valentine's Day.
Ingredients:
1 cup pancake mix (i used arrowhead mills buttermilk pancake & waffle mix)
1 cup + 1 tbsp milk
1 tbsp canola oil (vegetable oil) + more for skillet or griddle
1/4 cup nutella
1 banana (average size), sliced with 1/4 reserved to slice for garnish (waiting to slice this part keeps from browning)
confectioners sugar, for garnish
Directions:
1. Lightly coat skillet or griddle with oil and heat over medium to medium-high heat.
2. Combine mix with milk, oil and Nutella. Whisk until smooth. Measure about 1/2 cup of batter and slowly pour into pan, be sure to leave a couple inches between each. Turn when bubbles form on surface and edges begin to dry and cook on other side for about 3 minutes or until golden brown.
3. *The batter is brown so keep a close eye so as not to overcook them.
4. *This will probably need to be done in batches. I cooked about 2 at a time. I placed them on a plate tented in foil to keep warm.
5. *For thicker pancakes, use less liquid. For thinner pancakes, use more liquid.
6. To serve, sprinkle tops with confectioners sugar (sifted) and slices of banana. See Photo
